What conductor has recorded the most definitive versions?
There is only on answer to that. Herbert Von Karajan. Here is just a few-
La Mer, Eroica, Dvorak Cello Concerto, Mahler 6th, Bruckner 8th, and on and on and on.

Almost, Von Karajan is the best for German based music. His only flaw was in correcting the tympani part in the Scherzo of Bruckner's 9th.
However, Sir Thomas Beecham, or Sir Adrian Boult would be better for most English composers, and Munch, and Boulez are superior for French. No one has yet matched Riener's recording of the Pines/Fountains. by Respighi. I would have agreed the you in the ancient times, that he was the premier Russian conductor, Gennadi Rozhdestvensky, and Neene Jarvi have changed that. Actually, the best general conductor might be Bernard Haitink.
So with the above reservations you are correct, but different points of view on music are like seeing a sculpture from different sides.
Give Rostropovich some credit in the Dvorak, but I really agree on that one.
Just an afterthought; when you think of the performances Neeme Jarvi has attained with orchestras that are mediocre, at best, it says much about his ability as a conductor. (I mean, anyone who can get the New Jersey Symphony to sound good is turning water into wine).
